Description
An ancient grain of the Aztec’s, Amaranth grains are a complementing source of thiamine, niacin,
riboflavin, and folate, and dietary minerals including calcium, iron, magnesium, phosphorus, zinc, copper,
and manganese . Amaranth seeds contain lysine, an essential amino acid, limited in
grains or other plant sources.
Amaranth too is limited in some essential amino acids, such as leucine and
threonine. One of the most important aspects of this tiny grain is that it’s gluten-free!
Not least in this list, amaranth is the only grain with documented vitamin C content.
